SPAGHETTI WITH BOTTARGA

Wine: Vernaccia della Valle del Tirso

Ingredients: 500 g di spaghetti, 80 g of bottarga, 1 glass of extraviergin olive oil, water, salt

Cook the spaghetti in plenty salted water. In the meantime put the oil in a pan and brown the grated bottarga. Then drain the spaghetti "al dente", sauté in a pan with the bottarga and add again some just grated bottarga
