FISH SOUP
Wine: Armonie
Ingredients for 4 people:
1 kg of fish for soup, (cuttlefish, turbot, scorpion fish, smooth dogfish,
sea hen, small soles and mantis shrimps), 1 glass of oil, 1 onion, 5
ripe tomatoes, 2 cloves of garlic, 1/2 glass of vinegar, parsley, salt
and pepper.
Clean and prepare the fish leaving the small ones whole and cutting the
bigger ones into 3 - 4 pieces.
Brown the chopped onion in the oil, add the tomatoes and the vinegar
diluted in the same amount of water.
Add salt, a pinch of pepper and bring to the boil. Chop the parsley and
put it into the pan with the sauce and then add the fish with the firmest
flesh. After 10 minutes add the fish with softer flesh. Cover with warm
water and continue to cook, uncovered, far about 30 minutes.
