SPINU OF PORK

Wine: Terras, Torremora

Ingredients for 4 people: 2lbs/1kg pork ribs, 1 onion, 2 cloves of garlic, 2 bayleaves, a few sprigs of flat-Ieaf parsley, 8oz/200g. pitted black olives, 2 tablespoons of extra vir9in olive oil, a glass of medium aromatic white wine, salt and pepper

Peel the onion and slice thinly, fry with the oil, add the pork ribs, bayleaves and whole garlic cloves. When the ribs are evenly browned, pour in the white wine and cook gently until the wine evaporates. Season with salt and pepper, add hot water and cook until the sauce thickens. Just before the end of the cooking time, add the chopped olives and parsley. Serve pipino hot.
