ORISTANO BURRIDA
Wine: Maris
Ingredients
for 4 people:
2lbs/1kg of fish (choose from a variety), 12oz./400 g of ripe cooking
tomatoes, 1 glass of white wine vinegar, olive oil, 1 lemon, 1 clove
of garlic, salt
Clean the fish, chop into small pieces and boil in salted boiling water
with the vinegar and slices of lemon.
Drain, spread over a serving dish and leave to cool. In the meantime
prepare the tomato sauce, chop the garlic, fry in a little oil, add the
tomatoes, peeled, chopped and deseeded.
Cook over a low flame until the sauce thickens, then pour over the fish.
Cover with a large dish and leave to cool. Serve cold.
