MAZZAMURRU
Wine: Achilea, Torremora
Ingredients:
600 g of ripe tomatoes, 500 g of stale bread of wheat, 100 g of strong
pecorino cheese, 1 onion, basil, extraviergin olive oil, salt
Plug the tomatoes in boiling water,peel, chop and deseed them, Put in
a pan some oil and fry a little onion finely chopped; add the tomatoes,
some basil leaves, a pinch of salt and leave cook for 20 minutes. Bring
the water to the boil and plunge for a few minutes the sliced bread.
In a tureen, place a layer of tomato sauce and sprinkle with the grated
pecorino cheese; add a layer of bread and continue with layer of bread,
sauce and pecorino cheese.
Before to serve, leave to rest for some minutes.
