PANE FRATAU

Ingredients
for 4 people: 4 sheets of “pane carasau” (wafer
thin, dry bread, similar to filo pastry, typical of the region),
Casizolu cheese or similar,
4 eggs, vinegar, fresh tomato sauce, salt
Briefly dip the “pane carasau” in boiling water, remove,
wring out the excess water and place on 4 plates.
Spread with the tomato sauce and sprinkle with the grated cheese.
Poach the eggs in boiling water with a little vinegar for five minutes,
remove with a slotted spoon, taking care not the break them, and place
on the top of the bread mixture.
